Odin isn't the only Allfather-tier deity. You've got at least the Asgardians, the Babylonians, and Olympians. So wouldn't they all know the prophecy and what's going to happen afterwards, if not also have their hands in pushing destiny along?

Well, the Olympians are dead (or unmade, I guess) so they're probably not doing much. And Odin is an Asgardian. I'm guessing you meant to include the Chinese Zodiac critters?

Probably Odin had a more direct line because it involved the mechanizations of Hel within his own pantheon and part of the Stickworld (northern region). At least, that's how I'd handwave it.

Probably. I just remember there are multiple pantheons and just posted the first three to show up on their wiki. It's really the same problem I have with Marvel and DC comics. There's multiple pantheons, with "equal" leaders, but only the Asgardians/Olympians (Marvel/DC) are discussed in any meaningful way. At least in OOTS it's one storyline and one writer so it isn't as annoying.

But then the allosaur's fangs won't be magic. Vampires in 3.5e have Damage Reduction (10) against non-magic/silver weapons so Bloodfeast as an Allosaurus would be barely doing long sword damage without the potion.

That's a whole lot of castings of "Hasten Vampirism", which I assume isn't a 1st or 2nd level spell. I guess maybe Durkon taught it to the Exarch and two other vampires but that'd be a tight schedule.

On the other hand, Durkon & Co went to find a place to meditate for new spells so maybe it doesn't really matter how many spells they cast previously.
