There are two things you should probably know about anime that will completely change your understanding of it.
1. The vast majority of anime are adaptations of manga or light novels. Truly original, intended for animation, works are in the minority. 2. Animation plot vastly outpaces manga and light novel plot.
I don't think it requires a spoiler, but just in case. This is why Soul Eater has a terrible ending. It's based on a manga that is still being written, and so the anime is given a filler ending (one that was made up by other writers to prematurely end the plot). This is also why there are 2 FMA animes, because one was produced earlier and forced into a filler ending and the second was made later and follows the manga plot. This is also why very long series like Naruto and Bleach have low points where they get incredibly crappy (beyond the typical crap in them), because writers create a filler arc to bide time until more plot from the manga is written.
Just like Fullmetal alchemist its a Square Enix publication with is a monthly magazine. They cuaght up to where the series was and made an ending to finish the series. Unless the mangas gone downhill since I read it expect a 2nd series like FMA Brotherhood possibly.

Is Maka turning into a man considered "going downhill"?
